Pork Chops and Mashed Potatoes

I have been on a mission to clean out my freezer.  We are getting close to moving and I know from experience that frozen food does not move very well.
So on my exploration of the freezer the other day I found at the bottom of the pile a package of two pork chops that had been forgotten back in the depths.  I saw them and knew what we were having for supper!  Fried Pork chops and mashed potatoes with pork gravy!  If I had thought about supper earlier than 45 minutes before supper I could have made fresh bread to go with all of it but it takes at a minimum of 2 hours so that was out of the question unfortunately.  This meal also would have had broccoli with it but my kids are notorious for getting into the fridge and finding the things that are going to be used in a meal and eating them for snacks.  Oh well, it was pretty tasty all the same; especially the gravy!

The Rooster's New Job

For those of you who have been wanting to know: I heard from the Rooster today and they finally have his packet put together.  We now know what he will be for the next three years!  Are you ready for this?!  He will be a Horizontal Construction Engineer, or rather a 12N.  If any of you are wondering just what he will be doing go check out this website.  For those of you who don't want to go read it basically what he will be doing is playing with big machines in the dirt!  I am betting West is going to LOVE!!! his daddy's new job.  Now the only question is will the Rooster?!

As of this moment he does not have his orders yet so we still don't know when he will be leaving Texas to head on up to Ft Leonard Wood, MO for 8 weeks of training, and we won't know where we are going to be stationed until he is almost done with his training so that is also still up in the air so to speak.

But all-in-all I think today was a step in the right direction.  This whole process has been a long waiting game, but then what isn't in the military huh?  Waiting is certainly not my strong suit but I am managing and we will eventually get on to the next step in due time.

Sprouting!

I love spring!  Here in my part of Wyoming the winter seems to just drag on forever.  But when it finally starts to come to an end (and we still aren't quite at the end yet) some of the best things start happening:
  • warmer days
  • longer hours of the sun shining
  • kids playing outside
  • green grass
  • birds in bird feeders and bird baths
  • bikes
  • skirts
  • no more coats (but still occasionally needing jackets or sweaters)
  • dirt between my fingers
  • the park
  • picnics
  • all the colors 
  • sleeping with the windows open
  • coffee on the porch
So here's to new life and exciting things to come - may this sprout remind you of all the things you love about spring in your neck of the woods!

Gardening in the Army

Here is a picture of my garden!  I have been anticipating a move of some sort since last August so I have in one way or another been planning to not have a huge garden, if one at all.  Then when the Rooster found out what his new job would be (known as an MOS in the Army) we found out we might be moving to Texas just temporarily for him to finish his training and then on to somewhere else to his duty of station.  So I had at that time thought I would at the very least have a small garden that could produce at least the bare essentials for our family.  I wasn't expecting anything too grand or glorious, most likely it would have been all in pots of some sort.  Then we got the news that they were changing his MOS again and he would be going to a different base to do training there and this would only be for three months so the kids and I would not be going. 
So I had started planning on using the bed the Rooster had built last year to plant a few things that are all cold weather items so we could have a small crop before we would be moving at the end of the summer.  I added a little bit of dirt to this one since the kids have been using it as a construction sight all winter and so a lot of the dirt had been moved to the other bed or into the yard some where.  I then smoothed it out and decided on what exactly I would be planting, went down to get a few more seeds from our local Gated Garden and came home to plot out where everything would be planted. 
Then on Friday afternoon I find out they might, just might, be giving him his old MOS back.  This means we would be moving sooner rather than later since he would not need to do any training.  This of course also means the garden would not be happening here, again.  However, we won't be finding out definite things until Monday, which seems to be the magic day around those parts where the Rooster is. 
All this waiting just feels like nothing but waiting on Monday to roll around again!  In fact I have now been waiting for 9 months worth of Mondays.
I am hoping this Monday brings us good news!
